why not have the working centaur? I enjoyed a particular Stargate Episode (SPOILER WARNING):
Dr. Daniel Jackson had more or less befriended a particular Unas (big, tough, semi-intelligent homonid) who had once taken him prisoner. This Unas was captured by slave traders, and was being held on another planet. SG1 went to buy him back. Now, these people had enslaved quite a number of Unases, and it was assumed that this was to be their way of life. They were treated as dumb beasts of burden, but it was later revealed that the Unases had once enslaved the ancestors of the humans, until the humans rebelled and took over, enslaving the unases. The unases made good slaves, not complaining or fighting back too much, following orders, getting the work done. But this new Unas they had captured was a bit less inbred, a bit more of a rebel, and had the help of SG1, in the end, to escape with his colleagues.
My point is that characters who may or may not be sentient in a story make good slaves, especially if you want to stage a slave revolt or something.
