I am formulating a sort of dragon of the sea (much like a Frost Dragon) what should I call them, sea-dragon, leviathan, or both?

If there are different races or people groups in your story, one could use one name and the other a different one. I like both.

Personally like Sea-Dragon best myself, but the idea to use both for different people groups is a very good one.

Sea serpent? Kraken? There's lots of names of individual ones, if you go digging. Every culture has sea monsters.

I like different cultures having different names for it. Here's another: Jormungand, the world serpent. If there are more than one, you could go with calling them "children of Jormungand."
