There's a geography to just about everything: bird migration, population densities and clusters, push-pull factors that determine why a person/family/group will relocate, etc. (I got a degree in this, so I could go on and on...). Much of what geographers do is called spatial analysis, using tools like maps, GPS, and GIS.
What if a geographer-bible-scholar were to attempt to map the spiritual activity of angels and demons on the earth? Would she succeed? Would she get herself into all kinds of trouble? Do you think cataloging such data would be possible or relevant?

I think it would only be relevant in relation to a similar mapping of human activities. It would be interesting to see which human activities attracted the most attention.

How about if the geographer realizes that landmarks like the Nazca plains are places where angels (or demons) reside or rest, awaiting the final great battles of Revelation?

I'm not sure the person would succeed, because we can't see angels and demons, so it would be hard to map their movements. If the person could see angels and demons somehow, then maybe it would work.
It would be interesting too, as torainfor said, to see what humans attracted the most attention. It reminds me of a manga I've been reading called xxxHolic (pronounced "holic," the "xxx" is a variable, standing for the variety of issues the clients have) which is about a high school boy named Watanuki who because of his blood is plagued by spirits all the time that only he can see. He thinks he's going to have to suffer alone with it until he meets Yuuko, the owner of a shop that grants wishes for those who can pay an appropriate price. She offers to rid him of the spirits in exchange for him working for her in her shop, and the rest of the manga (so far) is about his experiences doing that.
Attracting spirits can just be a generally annoying thing too, like with Ataru Moroboshi, the protagonist of the 1970's and 1980's anime series Urusei Yatsura, who attracts all sorts of spirits and aliens to himself due to his extreme bad luck.
